About the coffee

This coffee comes from the Fero Co-operative in Sidamo – a region known for some of the world's most sought-after coffees. The co-operative was founded in 1976 and today consists of over 4,500 small producers who grow coffee on small farms at altitudes up to 2,000 meters.

Fero Co-op is part of the Sidamo Farmers’ Co-operative Union, which works to improve conditions for producers and ensure high quality and traceability in the coffee supply chain.

The coffee is both organic and Fairtrade certified.

Region & terroir

The Sidamo region in Ethiopia is known for its ideal growing conditions with high altitude, fertile soil, and a stable climate. The local "heirloom" varieties, which grow naturally in the area, give the coffee its characteristic complexity with fruity, floral, and tea-like notes.

Processing

The coffee is fully washed, which gives a clean and clear flavor profile:

  • Selective hand-picking
  • Sorting by flotation
  • Depulping on the same day
  • Fermentation for 36–48 hours
  • Washing and sorting in channels
  • Drying on raised beds for 12–15 days
