Flavor profile

A complex yet easy-drinking coffee with high clarity. Fresh notes of apple and lime provide a lively acidity, balanced by a soft sweetness with associations of pastry. Finishes with a round and pleasant chocolate aftertaste.


About the coffee

This coffee is produced by the Abateraninkunga Ba Sholi Co-operative in central Rwanda. The cooperative was founded by 30 women in 2008 and today consists of over 600 producers.

The coffee is grown at altitudes up to 2,000 meters, where the climate and soil create ideal conditions for quality Arabica. The Sholi Co-op works organically and has also had a significant positive impact on the local area through investments in health and infrastructure, among other things.


Processing

The coffee is fully washed, which provides a clean and distinct flavor profile:

  • Selective hand-picking of ripe cherries
  • Sorting by flotation
  • Fermentation for 15–18 hours
  • Washing and density sorting
  • Drying on raised beds for 14–21 days
