Nestled in the lush forests of San Fernando, Nueva Segovia, Finca Santa Maria de Lourdes is a unique single-estate coffee farm owned by Octavio Peralta, who has meticulously restored and preserved its natural beauty since 1994. This 40-hectare farm, certified by the Rainforest Alliance, is known for its commitment to conservation and innovative specialty coffee processing. The estate, which includes native forest and protected wetlands, is renowned for its rare coffee varieties, including the heirloom Javanica and Yellow Catuai.

This microlot was processed with an extended anaerobic natural fermentation, imparting vibrant tropical fruit notes, floral honey, and warm spice to each cup. After being hand-picked, the ripe cherries undergo a careful 72-hour fermentation in temperature-controlled tanks, followed by up to 30 days of drying on raised beds to preserve complex flavors and aroma.
