Chemex filters for 6-10 cups

Freshly ground coffee (preferably from your own grinder)

Digital scale

Water, 94–96°C
Basic recipe

50 g coffee (medium to coarse grind)

750g hot water
-
Brewing time: about 4 minutes
How to do it

Rinse the filter with hot water – this removes the paper taste and warms the brewer. Pour out the water.

Grind the coffee and place it in the filter. Shake lightly to make the surface even. Reset the scale.

Start the timer and pour 75g of water over the coffee for 30–50 seconds – use a circular motion from the centre outwards. Give it a light swirl if necessary.

Then pour the remaining 675 g of water in a circular motion. Avoid hitting the edges of the filter. Adjust the pouring speed so that the water level remains fairly constant (about 1 cm below the edge).

The coffee should be finished brewing around the 4 minute mark. Remove the filter and serve.
Tips for the perfect brew

The side of the three-layer filter should face the pouring spout.

After rinsing, check that the filter is tight without air pockets.

Direct the water jet towards dark spots in the coffee grounds – this helps to saturate the coffee evenly.

If the coffee is too strong or bitter, try a coarser grind. If it is too weak or acidic, grind a little finer.
