Brewing guide – Get started with Chemex

You will need:

  • Your Chemex

  • Chemex filter paper

  • A grinder (for the best taste)

  • Digital scale

  • Hours

Basic recipe:

  • 50 g freshly ground coffee (medium/coarse)

  • 750g water, 94–96°C

  • Brewing time: about 4 minutes

How to do it:

  1. Rinse the filter with hot water – this will also heat your carafe.

  2. Pour out the rinse water.

  3. Add the coffee and reset the scale.

  4. Start the timer and pre-infuse: pour 75 g of water over the coffee in circles and let it steep for 30–50 seconds.

  5. Pour the rest (675 g) in circular motions, avoiding the edges – maintain a stable brewing height.

  6. When the water has run through (approx. 4 minutes), remove the filter – and serve.

Tips for perfection

  • Make sure the thickest side of the filter faces the pouring spout.

  • Avoid air pockets by ensuring the filter is tight against the glass edge.

  • Look for dark spots during brewing – direct your water towards these to ensure even extraction.

  • Does the coffee taste too strong or bitter? Try a coarser grind. Too sour or weak? Make it finer.

  • Try it out – and find your own favorite version!
